In just about every cafe in Sweden you will see chocolate oat balls studded with pearl sugar or coated with coconut. Although I’m sure I made something similar as a child in Britain, they seem to be a very Swedish thing. They are quick and easy, no bake treats when you need a sugar fix and, as they contain no eggs, they are often a vegan option in regular cafes.
To make them beat together 100g vegan margarine with 1.5 dl sugar (about 135g). Add 3 tablespoons cocoa powder, 1 tbs vanilla sugar (or 1 tsp vanilla extract) and 3 tbs cold coffee. Then mix in 5 dl oats (about 2 cups) until they are well coated in the chocolatey mixture. Roll into small balls, coat in pearl sugar or coconut then refrigerate until you can’t wait any longer. Makes lots.
