Vegan chocolate chip banana loaf

I’m a big fan of recipes which lend themselves to variations. I’ve posted on this theme before (see one recipe three ways: cookies and one recipe three ways: savoury crackers) but really using the same basic ingredients with just a few tweaks makes life easier; it’s fewer things to buy

This chocolate chip banana bread is simply a variation on the lemon banana bread but here’s the recipe anyway:

2 bananas, mashed

100g  Sunflower oil

175g light muscovado sugar (although caster is fine)

225g Self raising flour (sieved)

1 tsp baking powder

100g bag of dark chocolate chips

Preheat oven to 180C and line a loaf tin

Cream bananas, oil and sugar together. A bowl and a wooden spoon will do this fine but if I’m using my mixer I don’t even bother to mash the bananas first. Just start off at a low speed an build it up until everything is creamy.

Fold in the flour and baking powder and  then fold in the chocolate chips and put in lined loaf tin.

Bake for 1 hour but check after 45 minutes. A skewer should come out clean.

Cool before slicing.
