My Swedeheart has an imminent exam so I made him some snack bars to keep him energised while he studies. I used this recipe and added chocolate chunks, dried apricots, almonds and coconut. They are surprisingly moreish, even though they aren’t that sweet (I used 1/2 cup sugar and nothing else was sweetened). If I ever make them again, I would add add lots more mix-ins, I think the bars could handle it. It made quite a dent in my soya protein powder but there is still plenty left to make a load of meringues.
