Tofu and kale scramble which was served over homemade wholemeal bread. I mean really…it doesn't get more disgustingly wholesome than this! Who would have thought the day would come when tofu and kale would be top of my breakfast list over toast, bagels, muffins or waffles. Well come it did.
To finish it off a drizzle of flax oil shaken up with some dijon mustard and a little lemon juice.
If only all my meals were as virtuously tasty as this but then I might overdose on goodness and vitamins and we don't want that.
